Fruits scones

 

 

This is a very simple recipe for scones.  You can modify it to your own tastes, leave out the sultanas if you wish, and cut them to the size that you want.  You can serve with clotted cream of thick crème fraiche and strawberry jam or simply with butter.

INGREDIENTS

  • 225g self raising flour/ 225g of plain flour + 1 tsp baking powder or sachet of levure chimique
  • 50g unsalted butter
  • 150ml milk/ extra milk for brushing
  • 50g sultanas
  • 25g sugar

PREPARATION: Makes 12-14 mini scones, 7-8 large (6,5cm cutter):

  • Rub sifted flour and butter together.
  • Add sugar and fruit.
  • Add milk, mix with a knife.
  • Tip onto a floured board and knead very quickly until smooth.
  • Roll out to about 1-1,5cm thick.
  • Cut out to your preferred size, transfer to greased tray.
  • Bake at 180°C until golden (around 15mins)
  • Serve with cream and jam or butter.
